2021 Les Collines Vineyard Syrah
Tasting notes
Aromatics of white pepper, lavender and wildflowers, and clove. A rich and velvety mouthfeel gives way to black fruits and cassis, roasted meats, black winter truffle and forest floor, and graphite-like minerality. Fullbodied and concentrated yet with great acidity that leads to a long rich finish. If you have the patience, we strongly recommend aging for a couple years prior to enjoying. It will easily age ten plus years. Decant prior to enjoying. We’re not supposed to say this, but not only is this the best red wine we’ve ever made, we also don’t think you’ll find a better Syrah in the world at this price point.
Production notes
The fruit was harvested and sorted by hand on September 11, 2021. A three-day cold soak was employed prior to primary fermentation. 2021 was a hot year and we didn’t get the hang time we usually do. Although the fruit ripened perfectly, we decided on no whole cluster fermentation for any of our wines. During fermentation only yeast hulls and oxygen were used to aid fermentation - no commercial yeast or chemicals. Primary fermentation lasted approximately twelve days, while the wine stayed on skins for a total of thirty days including an extended maceration. During fermentation, manual punch downs were performed three times per day with a rack-and-return performed as necessary to aid fermentation. Secondary fermentation was also natural, the lees were stirred every few days, and ultimately, the wine was racked once off gross lees. The wine was aged for twenty-two months in French Oak and bottled unfined and unfiltered in September 2023. No chemicals, enzymes, adjuncts or other nonsense has been added to this wine.

One of Washington State’s great vineyards and farmed by the venerated Brad Sorensen, Les Collines is a special place and we are very fortunate to work with their fruit. Les Collines utilizes Live Ceritified and Salmon Safe farming practices. Its nestled in the foothills of the Blue Mountains at about 1100 to 1300 feet elevation with loess soil.
